How to Make Cucumber and Enoki Salad: A Simple Guide

Cucumber and enoki salad is a refreshing, crunchy, and healthy dish perfect for hot days or as a light appetizer. Here’s a step-by-step guide to making it effortlessly.

### Ingredients

- 1 large cucumber (firm, preferably English or Persian)

- 1 pack fresh enoki mushrooms (about 150g)

- 2 cloves garlic (minced)

- 1 tbsp soy sauce

- 1 tsp rice vinegar

- ½ tsp sugar

- 1 tsp sesame oil

- A pinch of salt and white pepper (to taste)

- Optional: Sesame seeds, chopped cilantro, or a dash of chili oil for extra flavor.

### Instructions

1. Prep the cucumber: Wash the cucumber thoroughly. If it’s not organic, peel half the skin for a striped look. Thinly slice it into half-moons or julienne strips (about 2-3 cm long). Place in a bowl, sprinkle with a pinch of salt, and let sit for 5 minutes to draw out excess water. Drain and pat dry with a paper towel.

2. Clean the enoki: Trim the root ends of the enoki mushrooms. Gently separate the strands and rinse under cold water. Blanch them in boiling water for 30 seconds, then immediately transfer to an ice bath to stop cooking. Squeeze out excess water and set aside.

3. Make the dressing: In a small bowl, whisk together minced garlic, soy sauce, rice vinegar, sugar, sesame oil, salt, and white pepper until the sugar dissolves.

4. Combine: In a large mixing bowl, combine the drained cucumber, blanched enoki, and dressing. Toss gently until everything is evenly coated.

5. Serve: Let the salad marinate for 5-10 minutes to allow the flavors to meld. Garnish with sesame seeds or cilantro before serving. Enjoy chilled or at room temperature!

This versatile dish can be customized with add-ons like shredded carrots, boiled shrimp, or a drizzle of chili oil. It’s quick, nutritious, and a crowd-pleaser!
