Cocoa mantou, a soft and slightly sweet twist on the classic steamed bun, combines the rich aroma of cocoa with the fluffy texture of traditional mantou. Here’s a simple guide to making them at home.
Ingredients:
- 300g all-purpose flour
- 30g cocoa powder
- 3g active dry yeast
- 15g sugar
- 150ml warm milk (around 35°C)
- 5g vegetable oil
Instructions:
1. Activate the yeast: Mix yeast and sugar in warm milk, let sit for 5–10 minutes until frothy.
2. Combine dry ingredients: Sift flour and cocoa powder into a large bowl. Gradually pour in the yeast mixture, stirring until a shaggy dough forms.
3. Knead the dough: Add oil and knead on a floured surface for 10–15 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for 1–2 hours until doubled in size.
4. Shape the mantou: Punch down the dough, divide into 8–10 equal portions, and roll each into a smooth ball.
5. Proof and steam: Place the buns on parchment paper in a steamer, cover, and let rest for 15 minutes. Steam over medium-high heat for 15–20 minutes. Turn off the heat and let them sit for 5 minutes before opening the lid.
Serve warm as a breakfast treat or dessert. Enjoy the delightful fusion of chocolate and fluffy mantou!
