Saqima, a beloved Chinese sweet snack, delights with its golden layers, fluffy texture, and honeyed fragrance. Making it at home is simpler than you think—follow this guide to master this traditional treat.
Ingredients: For the batter, you’ll need 250g all-purpose flour, 2 eggs, 3 tbsp sugar, and 1/4 cup water. For the syrup, 150g honey, 100g sugar, 1/4 cup water, and a pinch of salt work perfectly. Optional additions: dried fruits (like raisins or cranberries) or nuts (walnuts or sesame seeds) for extra flavor.
Steps:
1. Prepare the batter: Mix flour, eggs, sugar, and water into a smooth, thick dough. Knead for 10 minutes, then let it rest for 30 minutes.
2. Shape the dough: Roll the dough into a thin sheet (about 2mm thick), cut into long strips (2cm wide), and stretch each slightly to create a slight elasticity.
3. Fry the strips: Heat oil to 160°C. Deep-fry the dough strips until golden and puffy (about 1-2 minutes). Drain excess oil.
4. Make the syrup: Combine honey, sugar, water, and salt in a pan. Simmer over medium heat until it thickens slightly (about 5 minutes).
5. Assemble: Place the fried strips in a greased pan. Pour the hot syrup evenly over them, pressing gently to compact layers. Sprinkle with dried fruits or nuts.
6. Set and cut: Let it cool completely (about 1-2 hours), then cut into squares or bars.
Enjoy your homemade saqima—soft, chewy, and irresistibly sweet! Store in an airtight container to maintain freshness.
