Spicy Boiled Fish (水煮鱼) is a beloved Sichuan dish known for its tender fish, fiery broth, and numbing Sichuan peppercorn kick. Here’s a step-by-step guide to recreating restaurant-quality flavors at home.

Ingredients: 500g white fish fillets (like cod or tilapia), 200g bean sprouts, 2 tbsp cooking oil, 4 dried chilies, 1 tbsp Sichuan peppercorns, 3 garlic cloves, 1 ginger slice, 2 tbsp doubanjiang (broad bean paste), 1 tbsp light soy sauce, 1 tsp sugar, 1 egg white, 2 tbsp cornstarch, and chopped scallions/cilantro for garnish.

Steps:

1. Prep the fish: Cut fillets into 1cm thick slices. Marinate with egg white, 1 tbsp cornstarch, a pinch of salt, and 1 tsp light soy sauce for 15 minutes.
