Ingredients & Tools: You’ll need eggs (separated into yolks and whites), milk, butter, sugar (for sweet versions), cheese or herbs (for savory), flour, salt, and a pinch of cream of tartar to stabilize the egg whites. A round ramekin, whisk, and preheated oven are essential.

Step 1: Prepare the Base

Melt butter in a saucepan, whisk in flour to form a roux, then gradually add milk, stirring constantly until thickened. Remove from heat: for sweet soufflés, fold in egg yolks, sugar, and vanilla; for savory, mix in yolks, grated cheese, and herbs. Let it cool slightly.
