Spicy and Sour Sliced Lotus Root: A Culinary Guide

Spicy and sour sliced lotus root is a beloved appetizer or side dish, celebrated for its crisp texture and vibrant flavors. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients: 300g fresh lotus root, 2 tbsp vinegar, 1 tbsp soy sauce, 1 tsp sugar, 1-2 dried chili peppers (sliced), 1 tsp minced garlic, a pinch of salt, and 1 tbsp cooking oil. Optional: a few slices of ginger for extra aroma.

Steps:

1. Prepare the Lotus Root: Peel and thinly slice the lotus root (about 2mm thick). Soak the slices in cold water with a splash of vinegar to prevent browning, then drain and pat dry.

2. Blanch (Optional): For extra crispness, blanch the slices in boiling water for 30 seconds, then immediately transfer to an ice bath.

3. Make the Sauce: In a bowl, mix vinegar, soy sauce, sugar, salt, and minced garlic. Adjust the balance of sweet, sour, and spicy to your taste.

4. Stir-Fry: Heat oil in a wok over medium fire. Add dried chilies (and ginger if using) and stir-fry until fragrant. Toss in the lotus root slices and stir-fry for 1-2 minutes.

5. Combine: Pour the sauce over the lotus root, stir quickly to coat evenly, and cook for another 30 seconds. Serve warm or chilled.

Tips: For a tangier kick, add a dash of rice vinegar; for more depth, a spoonful of chili garlic sauce works wonders. This dish pairs perfectly with steamed rice or as a refreshing summer snack. Enjoy the crunch and zesty flavors in every bite!
