How to Stir-Fry Dutch Peas with Chinese Sausage

Stir-frying Dutch peas with Chinese sausage is a quick, flavorful dish that balances sweetness, crunch, and smoky flavors. Here’s a simple guide to making it perfectly.

Ingredients:

- 200g Dutch peas, washed and trimmed

- 150g Chinese sausage (lap cheong), sliced diagonally

- 2 cloves garlic, minced

- 1 tbsp cooking oil

- 1 tsp soy sauce

- ½ tsp oyster sauce (optional)

- Pinch of sugar

- Salt to taste

Steps:

1. Prep the ingredients: Rinse the Dutch peas and drain. Slice the sausage into thin, diagonal pieces for even cooking. Mince the garlic.

2. Cook the sausage: Heat oil in a wok or large skillet over medium heat. Add the sausage slices and stir-fry for 2–3 minutes until the edges are slightly crisp and the oils are released. Remove the sausage and set aside.

3. Sauté the aromatics: In the same pan, add a bit more oil if needed. Sauté minced garlic until fragrant (about 30 seconds).

4. Stir-fry the peas: Toss in the Dutch peas and stir-fry for 3–4 minutes until they turn bright green but remain crisp. Add a splash of water (1–2 tbsp) and cover briefly to steam them slightly if needed.

5. Combine and season: Return the sausage to the pan. Add soy sauce, oyster sauce (if using), and a pinch of sugar. Toss everything together for 1 minute. Adjust salt to taste.

6. Serve: Transfer to a plate and enjoy hot with steamed rice.

This dish takes under 15 minutes to prepare and is a delightful addition to any meal. The key is to avoid overcooking the peas to keep their crunch!
