Four-Joy Steamed Dumplings, or *Sixi Jiaozi*, are a classic Chinese dish symbolizing prosperity and good fortune. Named after its four fillings—pork, shrimp, chicken, and mushroom—these dumplings are tender, juicy, and packed with umami. Here’s a simple guide to making them at home.

Ingredients: For the dough, mix 300g all-purpose flour with 150ml warm water and a pinch of salt until smooth; let rest for 30 minutes. For the fillings, finely chop 100g each of ground pork, cooked shrimp, shredded chicken, and shiitake mushrooms. Mix each filling separately with seasonings: soy sauce, sesame oil, ginger, garlic, and a pinch of sugar.

Assembly: Roll the dough into thin circles. Place a spoonful of each filling in the center, fold the edges into four pleats to seal, creating a flower-like shape. Arrange dumplings on parchment-lined steamer baskets, leaving space between them.

Steaming: Bring water to a boil in a wok or steamer. Place baskets in, cover, and steam over medium heat for 15-20 minutes until the dough is translucent. Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil.
