Bazi Rou, a beloved dish from Shandong Province, China, is renowned for its tender pork, rich broth, and aromatic spices. The name, meaning "meat tied with a bundle," refers to the traditional method of tying pork cuts before braising. Here’s a simple guide to making this flavorful dish.
Ingredients: 500g pork belly (or shoulder, cut into large cubes), 3-4 dried chili peppers, 5-6 star anise, 3 cinnamon sticks, 2 bay leaves, 1 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp cooking wine, 1 tbsp rock sugar, 4-5 ginger slices, 3-4 garlic cloves, and water to cover.
Steps:
1. Prepare the Pork: Blanch pork cubes in boiling water for 5 minutes to remove impurities. Rinse and drain.
2. Sauté Aromatics: Heat oil in a pot over medium heat. Stir-fry ginger, garlic, dried chilies, star anise, cinnamon, and bay leaves until fragrant.
3. Brown the Pork: Add pork cubes and sear until lightly golden. Pour in cooking wine, soy sauce, and dark soy sauce, mixing well.
