Cashew brittle is a delightful treat loved for its crunchy texture and rich, nutty flavor. Making it at home is easier than you think—here’s a straightforward recipe to get you started.

First, gather your ingredients: 1 cup raw cashews, 1 cup granulated sugar, ½ cup light corn syrup, ¼ cup unsalted butter, 1 tsp vanilla extract, and a pinch of salt. You’ll also need a candy thermometer, a baking sheet lined with parchment paper, and a wooden spoon.

Begin by roasting the cashews: Spread them on a baking sheet and bake at 350°F (175°C) for 8–10 minutes until golden. Let them cool slightly, but keep them warm. In a heavy-bottomed saucepan, combine sugar, corn syrup, and salt over medium heat. Stir until the sugar dissolves, then let the mixture boil without stirring until it reaches 300°F (150°C) on the candy thermometer—the “hard crack” stage.
