Portuguese tarts, or *Pastéis de Nata*, are beloved worldwide for their crispy, flaky crust and creamy, egg-based custard. Mastering them at home is simpler than you think—here’s a step-by-step guide.

Ingredients: For the crust, you’ll need 250g all-purpose flour, 150g cold butter, and a pinch of salt. For the custard, whisk 4 egg yolks, 100g sugar, 200ml whole milk, 1 vanilla bean (or 1 tsp extract), and 50ml heavy cream until smooth.

Steps:

1. Make the crust: Rub cold butter into flour until it resembles breadcrumbs. Add ice water gradually, mix into a dough, and chill for 1 hour. Roll thin and line muffin tins, pressing firmly. Trim excess dough.

2. Prepare the custard: Heat milk, cream, and vanilla in a saucepan until warm (not boiling). Pour over the egg yolk-sugar mixture, whisking constantly. Strain to remove lumps.
