Braised Pork Belly and Potatoes: A Culinary Guide

Braised pork belly and potatoes, a beloved comfort dish, combines tender, fatty meat with hearty potatoes in a rich, savory sauce. Here’s a simple yet delicious method to master it.

First, prepare the ingredients: 500g pork belly (cut into 2cm cubes), 2 potatoes (peeled and halved), 1 onion (sliced), 3 garlic cloves (minced), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp sugar, 1 cup water, and cooking oil.

Heat oil in a pot over medium heat. Sear the pork belly until golden brown, then remove excess oil. Add garlic and onion, stir-frying until fragrant. Return the pork, then add soy sauce, oyster sauce, and sugar, coating evenly. Pour in water, bring to a boil, then simmer on low for 20 minutes.

Add the potatoes, ensuring they’re submerged in the liquid. Simmer for another 15–20 minutes until the pork is fork-tender and the potatoes are soft. Adjust seasoning with salt if needed. Garnish with green onions and serve hot with rice.

For extra flavor, star anise or cinnamon can be added during simmering. The key is slow cooking to let the flavors meld, creating a dish that’s comforting, flavorful, and satisfying. Enjoy this hearty meal with loved ones!
