How to Make Sweet Potato Mantou: A Step-by-Step Guide

Sweet potato mantou, a soft and slightly sweet twist on traditional steamed buns, are easy to make at home. Here’s a simple recipe to guide you.

Ingredients:

- 200g steamed and mashed sweet potato (about 1 medium potato)

- 300g all-purpose flour

- 3g active dry yeast

- 30g sugar (adjust to taste)

- 150ml warm water (or milk for richer flavor)

- A pinch of salt

Steps:

1. Prepare the dough: Dissolve yeast and sugar in warm water; let sit for 5 minutes until frothy. In a large bowl, mix mashed sweet potato, flour, salt, and yeast mixture. Knead into a smooth, non-sticky dough (add 1-2 tbsp water if too dry).

2. First rise: Cover the dough with a damp cloth and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

3. Shape the mantou: Punch down the dough to release air. Divide it into 8-10 equal portions. Roll each portion into a ball, then flatten slightly and shape into round or oval buns.

4. Second rise: Place the buns on parchment paper-lined steamer trays. Cover and let them rise for 20-30 minutes until puffy.

5. Steam: Bring water to a boil in a steamer. Carefully place the trays in, cover, and steam over medium-high heat for 15-18 minutes. Turn off the heat and let them sit for 5 minutes before opening the lid to prevent deflation.

Serving Suggestions:

Enjoy these fluffy, subtly sweet mantou plain, with butter, or as a side to soups. They stay fresh for 2-3 days when stored in an airtight container.
