Ingredients:
For the pastry: 250g all-purpose flour, 120g cold butter (cubed), 1 egg yolk, 5 tbsp cold water, and a pinch of salt. For the filling: 2 ripe mangoes (diced and mashed), 2 tbsp sugar, 1 tbsp cornstarch (mixed with 1 water), and 1 tsp lemon juice.
Steps:
1. Make the pastry: Mix flour, salt, and cold butter until crumbly. Add egg yolk and water, knead into a smooth dough. Chill for 30 minutes.
2. Prepare the filling: Combine mango pulp, sugar, lemon juice, and cornstarch mixture. Cook over low heat until thick. Cool completely.
3. Assemble: Roll the dough into a 5mm thick sheet. Cut into circles (use a cookie cutter). Place a spoonful of filling in the center, fold edges, and seal into a semicircle. Brush with egg wash.
