Scrambled egg noodles, or "chao mian," are a quick, satisfying dish loved for their simplicity and versatility. Here’s a basic recipe plus tips to customize it.

Ingredients:

- 200g fresh or dried noodles

- 2 eggs

- 2 tbsp cooking oil

- 2 cloves garlic (minced)

- 1 tbsp soy sauce

- 1/2 tsp sesame oil (optional)

- Salt and pepper to taste

- Optional: sliced vegetables (carrots, bell peppers), cooked shrimp, or chili flakes.

Steps:

1. Prepare the noodles: If using dried noodles, boil in salted water until al dente, then drain and rinse under cold water to stop cooking. Fresh noodles can be used directly.

2. Scramble the eggs: Beat eggs with a pinch of salt. Heat 1 tbsp oil in a wok over medium heat, pour in eggs, and scramble until just set. Remove and set aside.
