How to Make Braised Eggplant and Green Beans

Braised Eggplant and Green Beans is a popular, flavorful dish that balances tender vegetables with a savory sauce. Here’s a simple yet delicious recipe to guide you.

Ingredients:

- 1 eggplant (cut into 1-inch cubes),

- 200g green beans (trimmed and halved),

- 2 garlic cloves (minced),

- 1 tbsp ginger (grated),

- 3 tbsp cooking oil,

- 2 tbsp light soy sauce,

- 1 tbsp dark soy sauce,

- 1 tsp sugar,

- 1 cup vegetable broth,

- Salt to taste.

Steps:

1. Prep the Vegetables: Soak eggplant in salted water for 10 minutes to remove bitterness, then rinse and drain. Pat dry with a paper towel.

2. Stir-Fry: Heat oil in a wok or deep pan over medium-high heat. Add eggplant and fry until golden (about 5 minutes). Remove and set aside.

3. Cook Green Beans: In the same pan, stir-fry green beans for 3-4 minutes until slightly charred. Add garlic and ginger; sauté until fragrant (30 seconds).

4. Combine and Simmer: Return eggplant to the pan. Pour in soy sauces, sugar, and broth. Stir well, bring to a simmer, then cover and cook for 5-7 minutes until vegetables are tender.

5. Finish: Uncover, adjust salt, and cook for 1 more minute to thicken the sauce. Serve hot with steamed rice.

Tips: For extra umami, add a dash of oyster sauce or fermented black beans. Enjoy this hearty, veggie-packed meal!
