How to Make Hearty Lamb and Radish Soup

Lamb and radish soup is a comforting, nutrient-rich dish perfect for cold days. Here’s a simple yet delicious recipe to try.

Ingredients: 500g lamb (chopped into cubes), 1 large white radish (peeled and diced), 1 ginger slice, 3 garlic cloves, 1 carrot (optional, sliced), green onions, salt, pepper, 1 tbsp cooking oil.

Steps:

1. Prep the lamb: Soak lamb in cold water for 30 minutes to remove excess blood. Rinse and drain.

2. Sear the lamb: Heat oil in a pot over medium-high heat. Add lamb, ginger, and garlic. Stir-fry until lamb turns brown (5-7 minutes).

3. Simmer the broth: Pour in enough water to cover the lamb. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour until lamb is tender.

4. Add radish: Add diced radish and carrot (if using). Simmer for 20-30 minutes until radish becomes soft and translucent.

5. Season and serve: Season with salt and pepper to taste. Garnish with chopped green onions. Serve hot.

Tips: For a richer flavor, add a splash of rice wine while searing the lamb. You may also use chicken broth instead of water for a deeper taste. Enjoy this warm, savory soup with steamed rice for a satisfying meal!
