How to Make Sweet and Sour Fish: A Step-by-Step Guide

Sweet and sour fish is a beloved dish known for its crispy exterior, tender interior, and tangy-sweet sauce. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients:

500g white fish (like cod or tillet), cut into 1-inch cubes; 1 cup all-purpose flour; 1 egg (beaten); 2 cups oil (for frying); 1 bell pepper (diced); 1 pineapple (cubed); 3 cloves garlic (minced); 1 tbsp ginger (grated).

Sauce:

3 tbsp sugar; 4 tbsp vinegar; 1 tbsp soy sauce; 1 tbsp ketchup; 1 tbsp cornstarch (mixed with 2 tbsp water).

Instructions:

1. Prepare the fish: Pat fish dry, sprinkle with salt and pepper. Dip in beaten egg, then coat with flour. Deep-fry at 180°C until golden and crispy (3-4 minutes). Drain on paper towels.

2. Make the sauce: In a pan, heat 1 tbsp oil. Sauté garlic and ginger until fragrant. Add bell pepper and pineapple; stir-fry for 2 minutes.

3. Combine: Pour the sauce ingredients into the pan, bring to a simmer, and cook until thickened. Add the fried fish, gently toss to coat. Simmer for 1 minute.

4. Serve: Garnish with sesame seeds and green onions. Enjoy with steamed rice!

Tips: For extra crispiness, double-dip the fish in flour and egg before frying. Adjust sugar/vinegar to taste. This versatile dish pairs well with any white fish or tofu for a vegetarian twist.
