Ingredients:

500g fresh clams (soaked in salted water to remove sand), 3 cloves garlic (minced), 1 ginger slice (julienned), 2 green onions (chopped), 1 red chili (sliced, optional), 2 tbsp cooking oil, 1 tbsp light soy sauce, 1 tsp oyster sauce, 1 tsp sugar, a pinch of pepper, and 1 tbsp cooking wine.

Steps:

1. Prep the clams: Soak clams in salted water for 2 hours, then rinse thoroughly. Discard any with broken shells.

2. Sauté aromatics: Heat oil in a wok over high heat. Stir-fry garlic, ginger, and chili until fragrant (30 seconds).

3. Cook the clams: Add clams to the wok, pour in cooking wine, and stir-fry for 2 minutes until shells open slightly.

4. Season: Add soy sauce, oyster sauce, sugar, and pepper. Toss well, then cover and cook for 1–2 minutes until all shells open.

5. Finish: Stir in green onions, cook for 10 seconds, then serve hot with rice.
