Ingredients: 500g mutton (preferably with bones), 1 onion, 2 ginger slices, 3 garlic cloves, 1 carrot, 1 potato, salt, pepper, cumin, and a handful of herbs like cilantro or parsley.

Steps:

1. Prep the mutton: Soak the mutton in cold water for 30 minutes to remove excess blood. Rinse and pat dry.

2. Brown the meat: Heat oil in a pot, sear the mutton until golden on all sides. This locks in flavor.

3. Simmer the broth: Add ginger, garlic, and onion. Pour in enough water to cover the meat. Bring to a boil, then reduce heat and simmer for 1.5–2 hours until tender. Skim off foam occasionally.
