Braised hairtail (红烧带鱼) is a beloved Chinese dish known for its tender, flaky meat and savory, slightly sweet sauce. Here’s a simple yet authentic recipe to recreate it at home.

Ingredients:

- 2 fresh or frozen hairtail (cleaned and cut into 3-inch pieces)

- 3 tbsp cooking oil

- 1 tbsp ginger (minced), 2 cloves garlic (minced)

- 1 green onion (chopped)

- 2 tbsp light soy sauce, 1 tbsp dark soy sauce

- 1 tbsp Shaoxing wine, 1 tbsp sugar

- 1 cup water or stock

- Salt to taste

Steps:

1. Prepare the fish: Pat the hairtail dry and score both sides lightly to prevent curling during cooking. Dust with a pinch of salt.

2. Pan-fry: Heat oil in a wok over medium-high. Fry the hairtail until golden brown on both sides (about 3-4 minutes per side). Remove and set aside.
