How to Make Stir-Fried Sanxian: A Comprehensive Guide

Stir-Fried Sanxian (三鲜) is a classic Chinese dish loved for its vibrant flavors and tender-crisp textures. "Sanxian" translates to "three fresh ingredients," typically combining seafood, meat, and vegetables for a balanced, umami-rich experience. Here’s a step-by-step guide to mastering this versatile dish.

### Ingredients

- Protein: 150g shrimp (peeled and deveined), 100g sliced pork belly (or chicken), 100g squid (cleaned and cut into rings).

- Vegetables: 1 bell pepper (sliced), 1 carrot (julienned), 50g wood ear mushrooms (soaked and sliced), 2 scallions (chopped).

- Seasonings: 1 tbsp soy sauce, 1 tsp oyster sauce, 0.5 tsp sugar, 1 tsp Shaoxing wine, 1 minced garlic, 1 sliced ginger, salt, and pepper to taste.

- Thickener: 1 tsp cornstarch mixed with 2 tbsp water.

### Steps

1. Prep Ingredients: Marinate shrimp and pork with 1 tsp soy sauce, 0.5 tsp Shaoxing wine, and a pinch of salt for 15 minutes. Blanch squid in boiling water for 30 seconds, then drain.

2. Stir-Fry: Heat 2 tbsp oil in a wok over high heat. Sauté garlic and ginger until fragrant. Add pork and stir-fry until browned, then push to one side.

3. Cook Seafood: Add shrimp and squid, stir-frying for 1–2 minutes until shrimp turn pink. Remove and set aside.

4. Stir-Fry Vegetables: Toss in carrots, bell peppers, and wood ear mushrooms. Stir-fry for 2–3 minutes until crisp-tender.

5. Combine and Sauce: Return meat and seafood to the wok. Add soy sauce, oyster sauce, sugar, and pepper. Mix well.

6. Thicken: Pour in cornstarch slurry, stirring quickly until the sauce thickens. Garnish with scallions.

### Serving Tips

Serve hot with steamed rice or noodles. For a spicier kick, add a few dried chili peppers during stir-frying. Adjust ingredients based on preference—mushrooms can be replaced with bamboo shoots, or tofu for a vegetarian twist.
