A Guide to Making Spinach Pasta

Spinach pasta, a vibrant and nutritious twist on the classic, is surprisingly easy to make at home. Here’s a simple guide to crafting this colorful dish from scratch.

Ingredients: For 2 servings, you’ll need 100g spinach (fresh or frozen), 200g all-purpose flour, 2 large eggs, and a pinch of salt.

Steps:

1. Prepare the Spinach: If using fresh spinach, wilt it in boiling water for 1-2 minutes, then plunge into ice water to retain its color. Squeeze out excess moisture and blend into a smooth puree. For frozen spinach, thaw and drain thoroughly.

2. Make the Dough: On a clean surface, create a well with flour. Add the spinach puree, eggs, and salt. Gradually mix the flour into the wet ingredients until a shaggy dough forms.

3. Knead and Rest: Knead the dough for 10–15 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest at room temperature for 30 minutes.

4. Shape the Pasta: Roll out the dough thinly using a rolling pin or pasta machine. Cut into desired shapes, such as fettuccine or pappardelle.

5. Cook: Bring a large pot of salted water to a boil. Cook the pasta for 2–3 minutes until al dente. Serve with your favorite sauce, like marinara, pesto, or olive oil and garlic.

Tips: For a richer flavor, add a tablespoon of olive oil to the dough. Store fresh pasta in an airtight container for up to 2 days or freeze for longer use. Enjoy your homemade spinach pasta!
