Pan-fried dumplings, or *guo tie*, are a beloved comfort food with a crispy bottom and juicy filling. Here’s a simple guide to making them at home.
Step 1: Prepare the Filling
Mix 300g minced pork (or chicken/veggies) with 2 chopped water chestnuts, 1 shredded cabbage, 2 tbsp soy sauce, 1 tsp sesame oil, 1 minced garlic, and salt to taste. Stir well until the mixture becomes sticky.
Step 2: Assemble the Dumplings
Place a dumpling wrapper on your palm, add 1 tbsp filling in the center, fold it in half, and pinch the edges to seal. For a crispier result, you can leave a small opening at the top to let steam escape.
Step 3: Pan-Fry
Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange the dumplings in the pan, flat-side down, and fry for 2-3 minutes until the bottoms turn golden.
Step 4: Steam and Finish
Pour 50ml water into the pan (careful not to splash), cover immediately, and steam for 5-7 minutes until the filling is cooked through. Uncover, cook for another minute to crisp the bottom, then serve hot with dipping sauce.
