Beef and tomato stew is a comforting, one-pot dish perfect for chilly days. Here’s a simple yet delicious recipe to guide you.

Start by gathering ingredients: 500g beef chuck (cut into 1.5-inch cubes), 4 large tomatoes (peeled and chopped), 1 onion (diced), 3 garlic cloves (minced), 2 carrots (sliced), 2 celery stalks (chopped), 1 cup beef broth, 2 tbsp tomato paste, 1 tsp dried thyme, 1 bay leaf, salt, and pepper.

First, season the beef with salt and pepper. Heat 2 tbsp oil in a large pot over medium-high heat. Brown the beef on all sides (about 5-7 minutes), then remove and set aside. In the same pot, sauté onions, garlic, carrots, and celery until soft (5 minutes). Stir in tomato paste and cook for 1 minute.
