How to Make Chive Pancakes: A Simple Guide

Chive pancakes, or "jiu cai jian dan" in Chinese, are a quick, savory dish loved for their fresh flavor and crispy-tender texture. Here’s a simple guide to making them at home.

### Ingredients

- 1 cup fresh chives, finely chopped

- 2 large eggs

- ½ cup all-purpose flour

- ½ cup water (or milk for creaminess)

- Salt and pepper to taste

- 2 tbsp cooking oil (divided)

### Steps

1. Prepare the batter: Whisk eggs in a bowl, then add flour, water, salt, and pepper. Mix until smooth (no lumps). Fold in chives gently.

2. Heat the pan: Place a non-stick skillet over medium heat. Add 1 tbsp oil and swirl to coat.

3. Cook the pancake: Pour in half the batter, tilting the pan to spread it evenly. Cook for 2–3 minutes until the edges set and the bottom turns golden.

4. Flip and finish: Drizzle the remaining oil, then flip carefully. Cook for another 1–2 minutes until the center is set.

5. Serve: Cut into wedges and enjoy hot, plain or with a dash of soy sauce.

### Tips

- For extra flavor, add a pinch of sesame seeds or minced garlic to the batter.

- Use medium-high heat to avoid burning while ensuring the inside cooks through.

These pancakes are perfect for breakfast, lunch, or a light snack—simple, delicious, and ready in under 15 minutes!
