Braised crucian carp with tofu is a comforting, nutritious Chinese dish loved for its delicate flavor and tender texture. Here’s a simple guide to preparing it.
First, prepare the ingredients: 1 fresh crucian carp (cleaned and sliced), 1 block of firm tofu (cut into cubes), 3 slices of ginger, 2 cloves of garlic, 1 green onion, and cooking wine, soy sauce, salt, and white pepper to taste.
Heat 2 tablespoons of oil in a wok over medium heat. Pan-fry the carp lightly until both sides turn golden, then remove. In the same wok, sauté ginger and garlic until fragrant. Add the tofu cubes and gently stir to coat them with oil.
Return the carp to the wok, pour in 500ml of water, and add 1 tablespoon of cooking wine and 1 tablespoon of light soy sauce. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15–20 minutes, allowing the flavors to meld. Season with salt and white pepper. Garnish with chopped green onions before serving.
This dish pairs perfectly with steamed rice, offering a balanced taste of umami and freshness. Enjoy this homemade delicacy with family and friends!
