How to Make Scallion Pancakes: A Simple Guide

Scallion pancakes, a beloved Chinese street food, are crispy, flaky, and packed with savory flavor. Here’s an easy step-by-step guide to making them at home.

Ingredients:

- 1½ cups all-purpose flour

- ½ cup warm water

- ½ cup cold water

- 1 tsp salt

- 3–4 chopped scallions

- 2–3 tbsp cooking oil

Instructions:

1. Make the dough: In a large bowl, mix flour and salt. Gradually add warm and cold water, kneading into a smooth dough. Cover and let it rest for 30 minutes.

2. Roll and fill: Divide the dough into 4 balls. On a floured surface, roll each ball into a thin rectangle. Drizzle with oil, sprinkle scallions evenly, and roll into a log. Coil the log into a spiral, then flatten it into a pancake.

3. Cook: Heat a pan over medium heat. Add a little oil and cook the pancake for 3–4 minutes per side until golden and crispy. Press gently with a spatula to ensure even cooking.

4. Serve: Cut into wedges and enjoy hot with soy sauce or chili dip.

Tips: For extra flakiness, repeat the rolling and coiling process twice. Adjust scallion quantity to your taste. These pancakes are best fresh but can be reheated in a toaster for crispiness. Simple yet delicious, they’re a perfect snack or side dish!
