First, gather fresh yuzu (or substitute with lemon if unavailable), honey, and a clean glass jar. Wash the yuzu thoroughly, then peel the rind (avoiding the white pith, which is bitter). Slice the yuzu into thin rounds, removing any seeds.
In the jar, layer the yuzu slices and honey alternately, starting and ending with honey to preserve the fruit. Seal the jar tightly and store it in a cool, dark place for 1–2 weeks, shaking gently daily. The mixture will thicken as the yuzu releases its juices.
Once ready, use 1–2 tablespoons of the yuzu-honey blend per cup of hot water for a soothing drink. It can also be added to cocktails, teas, or drizzled over desserts. Store in the refrigerator for up to a year.
