Saozi noodles, a beloved Shaanxi delicacy, are celebrated for their savory-sour broth, tender noodles, and vibrant toppings. Mastering this dish involves three key steps: preparing the tangy "saozi" sauce, cooking the noodles, and assembling with toppings.

First, the saozi sauce is the heart of the dish. Finely chop 200g of pork belly (or substitute with tofu for a vegetarian version) and stir-fry until crispy.
