A Guide to Making Korean Kimchi

Korean kimchi, a iconic fermented dish, is beloved worldwide for its spicy, tangy flavor and health benefits. While recipes vary by region and family, here’s a basic guide to making traditional napa cabbage kimchi.

Start with a whole napa cabbage, cut lengthwise and soaked in salted water for 4-6 hours until softened. Rinse and dry thoroughly. For the paste, mix 1 cup of gochugaru (Korean chili flakes), 2 tablespoons of fish sauce, 1 tablespoon of shrimp paste, 1 tablespoon of sugar, and minced garlic and ginger to taste. Add chopped radish, green onions, and carrots for texture and sweetness.

Spread the paste evenly between each cabbage leaf, ensuring full coverage. Pack tightly into a clean jar, pressing to remove air bubbles. Let it ferment at room temperature for 1-3 days (depending on desired sourness), then refrigerate. It’s ready to eat in a week and improves with time, lasting for months.
