How to Make Stir-Fried Yam with Wood Ear Mushrooms

Stir-fried yam with wood ear mushrooms is a nutritious and delicious Chinese dish, loved for its crispy-tender texture and umami flavor. Here’s a simple guide to making it at home.

Ingredients: 1 fresh yam (peeled and sliced into thin rounds), 50g wood ear mushrooms (soaked and torn into small pieces), 2 cloves garlic (minced), 1 red chili (sliced, optional), 1 tbsp cooking oil, 1 tsp light soy sauce, ½ tsp dark soy sauce, 1 pinch of sugar, and salt to taste.

Steps:

1. Prep the ingredients: Soak wood ear mushrooms in warm water for 20 minutes until soft, then rinse and drain. Peel the yam, slice it into thin rounds, and immediately soak in water with a drop of vinegar to prevent browning.

2. Stir-fry: Heat oil in a wok over medium-high heat. Add minced garlic and chili (if using) and stir-fry until fragrant.

3. Cook yam: Drain the yam slices and add them to the wok. Stir-fry for 3-4 minutes until slightly tender.

4. Add mushrooms: Toss in the wood ear mushrooms and continue stir-frying for 2 minutes.

5. Season: Pour in light and dark soy sauce, add a pinch of sugar for balance, and season with salt. Stir well for another minute.

Serve hot as a side dish or with steamed rice. The yam turns creamy-crisp, while the wood ear mushrooms add a chewy texture, making this dish both healthy and satisfying!
