Ingredients:

1 cup rice (preferably short-grain, rinsed and soaked for 30 minutes), 500ml chicken broth, 200g boneless chicken breast (diced), 5-6 shiitake mushrooms (sliced), 1 tbsp ginger (minced), 2 green onions (chopped), 1 tsp soy sauce, salt and pepper to taste, 1 tsp sesame oil (optional).

Steps:

1. Cook the Rice Base: In a pot, combine rice and chicken broth. Bring to a boil, then simmer on low heat for 20-25 minutes, stirring occasionally, until the rice breaks down and thickens.

2. Sauté Aromatics: Heat 1 tsp oil in a pan. Sauté minced ginger until fragrant, then add mushrooms and cook until tender.

3. Add Chicken: Toss in diced chicken, cook until no longer pink, and season with soy sauce.

4. Combine and Simmer: Mix the chicken-mushroom mixture into the porridge. Simmer for 5-10 minutes until the chicken is cooked through. Adjust seasoning with salt and pepper.
