Ingredients: 1 fresh pomfret (about 500g), 3 slices of ginger, 2 cloves of garlic, 2 scallions, 1 tbsp soy sauce, 1 tbsp light soy sauce, 1 tsp Shaoxing wine, 1 tsp sugar, 200ml water, and vegetable oil for frying.
