Cucumber salad, or "拍黄瓜" (pāi huángguā) in Chinese, is a refreshing, crunchy dish loved worldwide. Here’s a simple guide to making it perfectly.

Step 1: Prepare the Cucumbers

Choose 2–3 fresh, firm cucumbers. Wash and dry them thoroughly. For the signature "smashed" texture, place a cucumber on a cutting board and gently smash it with the flat side of a cleaver or a heavy pan. Break it into 2–3 inch pieces, then cut into bite-sized strips. This step helps flavors seep in better.

Step 2: Marinate

Transfer the cucumber to a bowl. Add ½ tsp salt, mix well, and let sit for 15–20 minutes to draw out excess water. Drain the liquid afterward—this keeps the salad crisp.

Step 3: Add Flavorings

In a small bowl, whisk together 2 tbsp rice vinegar, 1 tbsp soy sauce, 1 tsp sugar, 1 minced garlic clove, and a pinch of chili flakes (optional). Pour this over the cucumber, top with 1 tbsp sesame oil and 1 tsp toasted sesame seeds. Toss gently to coat.

Step 4: Serve
