How to Make Fermented Rice Balls (Laozao Tangyuan)

Fermented rice balls, or *Laozao Tangyuan*, are a sweet, comforting Chinese dessert combining tangy fermented glutinous rice (*laozao*) with chewy rice balls. Here’s a simple guide to making them at home.

Ingredients:

- 200g glutinous rice flour

- 150g fermented glutinous rice (*laozao*)

- 100g rock sugar (or to taste)

- 500ml water

- Optional: dried osmanthus, red dates, or eggs for richness.

Steps:

1. Prepare the Rice Balls: Mix glutinous rice flour with warm water gradually until a soft dough forms. Knead for 5 minutes, then roll into small balls (about 2cm in diameter). Set aside.

2. Cook the Fermented Rice: In a pot, bring water to a boil. Add *laozao* and rock sugar, stirring until dissolved. Reduce heat and simmer for 10 minutes to let the flavors meld.

3. Cook the Balls: Gently drop the rice balls into the simmering *laozao* broth. Cook for 8–10 minutes until they float and turn translucent. Stir gently to avoid sticking.

4. Serve: Ladle into bowls, adding dried osmanthus or red dates if desired. For a richer version, crack an egg into the hot broth and swirl lightly before serving.
