Ingredients: 500g pork ribs, 400g sauerkraut (rinsed and drained), 1 ginger slice, 3 garlic cloves, 1 star anise, 1 tbsp light soy sauce, 1 tbsp cooking wine, 1 tsp sugar, sesame oil, and water or broth.

Steps:

1. Prepare the ribs: Soak ribs in cold water for 30 minutes to remove excess blood. Blanch in boiling water with ginger and cooking wine for 5 minutes, then rinse and drain.

2. Sauté aromatics: Heat oil in a pot over medium heat. Stir-fry ginger, garlic, and star anise until fragrant.
