Sichuan Spicy Chicken: A Culinary Guide

Sichuan Spicy Chicken (Jiao Ji Ji) is a fiery, flavorful dish loved for its tender chicken and bold spices. Here’s a simple yet authentic guide to recreating it at home.

Ingredients: 500g boneless chicken thighs (cut into bite-sized pieces), 10-15 dried red chilies (sliced), 3-4 Sichuan peppercorns, 2 garlic cloves (minced), 1 tbsp ginger (grated), 2 tbsp cooking oil, 1 tbsp soy sauce, 1 tsp sugar, 1/2 tsp salt, and a pinch of five-spice powder.

Steps:

1. Marinate the chicken: In a bowl, mix chicken with 1 tbsp soy sauce, 1/2 tsp salt, and ginger. Let it sit for 20 minutes.

2. Prepare the sauce: In a small bowl, combine soy sauce, sugar, salt, and five-spice powder.

3. Stir-fry: Heat oil in a wok over medium-high heat. Add Sichuan peppercorns and dried chilies, stir-frying until fragrant (30 seconds). Add garlic and marinated chicken, stir-frying until chicken is golden (5-7 minutes).

4. Simmer: Pour the sauce over the chicken, mix well, and simmer for 2-3 minutes until the sauce thickens.

5. Serve: Garnish with sesame seeds and chopped scallions. Enjoy with steamed rice!

Tips: For extra heat, add more chilies or a dash of chili oil. Adjust seasoning to taste. This dish pairs perfectly with cold beer to balance the spice!
