500g large shrimp, peeled and deveined; 3 tbsp cooking oil; 4 sliced garlic; 1 tbsp ginger, julienned; 1 chopped green onion; 2 tbsp light soy sauce; 1 tbsp dark soy sauce; 1 tsp sugar; 1 cup water or broth; 1 tsp cornstarch mixed with 2 tbsp water (for thickening); a pinch of white pepper.

Steps:

1. Prep the shrimp: Rinse shrimp and pat dry. Marinate with 1 tsp light soy sauce and a pinch of white pepper for 10 minutes.

2. Sauté aromatics: Heat oil in a wok over medium heat. Stir-fry garlic and ginger until fragrant (about 30 seconds). Avoid browning to prevent bitterness.
