Beef Curry Rice: A Comprehensive Guide

Beef curry rice is a comforting, globally loved dish that blends tender meat, aromatic spices, and rich sauce served over fluffy rice. Here’s a detailed guide to crafting this flavorful meal.

Ingredients: 500g beef (stewing beef or chuck works best), 2 onions, 3 carrots, 3 potatoes, 4 tbsp curry powder (or 2 blocks curry roux), 2 garlic cloves, 1 tbsp ginger, 500ml beef broth, 2 tbsp oil, salt, and pepper.

Steps:

1. Prep the Ingredients: Cut beef into 2cm cubes. Chop onions, carrots, and potatoes into bite-sized pieces. Mince garlic and ginger.

2. Brown the Beef: Heat oil in a large pot. Sear beef over medium-high heat until browned on all sides. Remove and set aside.

3. Sauté Aromatics: In the same pot, cook onions until translucent (5 mins). Add garlic, ginger, and curry powder, stirring for 1 minute until fragrant.

4. Simmer the Curry: Return beef to the pot. Add carrots, potatoes, and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours until beef is tender.

5. Thicken the Sauce: For a thicker curry, dissolve curry roux in a little hot water and stir into the pot. Simmer for 10 more minutes. Season with salt and pepper to taste.

6. Serve: Ladle hot curry over steamed rice and garnish with parsley or a soft-boiled egg.

Tips: For extra depth, add a tablespoon of tomato paste or honey. Adjust spice levels with chili flakes. Pair with pickled onions or a side salad for balance. This hearty curry is perfect for meal prep and tastes even better the next day!
