How to Make Beef Oxtail Soup: A Comprehensive Guide

Beef oxtail soup, a rich and hearty dish, is beloved for its tender meat and flavorful broth. Here’s a step-by-step guide to crafting this comforting classic.

Ingredients: 2 lbs oxtail, chopped; 1 onion, diced; 2 carrots, sliced; 2 celery stalks, chopped; 3 garlic cloves, minced; 6 cups beef broth; 1 bay leaf; 1 tsp thyme; 2 tbsp tomato paste; Salt and pepper to taste. Optional: 1 cup red wine for depth.

Instructions:

1. Brown the Oxtail: Pat oxtail dry, season with salt and pepper. Sear in a large pot over medium-high heat until golden on all sides. Remove and set aside.

2. Sauté Aromatics: In the same pot, add onion, carrots, and celery. Cook until softened (5-7 mins). Add garlic and tomato paste; cook for 1 minute until fragrant.

3. Simmer: Return oxtail to the pot. Pour in broth (and wine, if using). Add bay leaf and thyme. Bring to a boil, then reduce heat to low. Cover and simmer for 2.5–3 hours, or until meat is tender.
