Pearl glutinous rice balls, or "zhenzhu niuwan," are tender, chewy dumplings often served in sweet soups or as snacks. Here’s a simple guide to making them at home.

Ingredients:

- 200g glutinous rice flour

- 100g warm water (adjust as needed)

- 1 tbsp sugar (optional)

- Filling choices: black sesame paste, peanut butter, or red bean paste

Steps:

1. Prepare the dough: In a bowl, mix glutinous rice flour and sugar. Gradually add warm water, stirring until a soft, non-sticky dough forms. Knead for 5 minutes, then let rest for 10 minutes.

2. Make filling: If using, roll fillings into small, 1cm balls.

3. Shape the rice balls: Pinch a small piece of dough (about 15g), flatten it, and wrap a filling ball inside. Seal tightly, then roll into a smooth ball. For unfilled versions, simply shape the dough into balls.

4. Cook: Bring a pot of water to a boil. Gently drop in the rice balls (cook in batches to avoid sticking). Cook for 8-10 minutes until they float to the surface.

5. Serve: Remove with a slotted spoon. Enjoy in hot ginger syrup, coconut milk, or plain.
