Lemon paste, a versatile and zesty condiment, is easy to make at home with just lemons and sugar. Here’s a basic guide to get you started.
First, wash and dry 5-6 organic lemons thoroughly. Cut off the ends, then slice them into thin rounds, removing any seeds. In a bowl, combine the lemon slices with 1 cup of granulated sugar (adjust to taste) and a pinch of salt. Toss gently and let them sit for 30 minutes to allow the sugar to draw out the lemon juice.
Transfer the mixture to a heavy-bottomed pot. Cook over medium-low heat, stirring occasionally, until the sugar dissolves completely. Then, reduce the heat to low and simmer for 40-50 minutes, stirring more frequently to prevent sticking. The paste will thicken and turn a translucent golden color.
Once done, remove from heat and let it cool. Use a blender to puree until smooth, or leave it slightly chunky for texture. Store in a sterilized jar and refrigerate for up to a month. This paste is perfect for flavoring drinks, marinades, desserts, or spreading on toast. Enjoy your homemade lemon paste!
