How to Make Braised Quail Eggs with Tiger Skin

Tiger skin quail eggs, named for their crispy, wrinkled exterior resembling tiger stripes, are a popular Chinese appetizer. Here’s a simple guide to making them at home.

Ingredients: 20 quail eggs, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp sugar, 5-star anise, 1 cinnamon stick, cooking oil, sliced green onions for garnish.

Steps:

1. Boil and peel: Boil quail eggs for 5 minutes, then transfer to ice water. Peel gently under running water to avoid cracks.

2. Deep-fry: Heat oil in a wok (170°C). Fry peeled eggs for 2-3 minutes until golden brown. Remove and drain.

3. Braise: In a pot, add 1 cup water, soy sauces, sugar, anise, and cinnamon. Bring to a simmer. Add fried eggs, cover, and cook on low heat for 15 minutes. Let them steep in the sauce for 10 minutes to absorb flavor.

4. Serve: Transfer to a plate, garnish with green onions. Enjoy warm or cold!

Variations: For a spicy twist, add dried chilies to the braising liquid. For a sweeter taste, increase sugar or add a drizzle of honey. These eggs pair perfectly with rice or as a snack with drinks. Their tender, savory, and slightly chewy texture makes them a crowd-pleaser!
