How to Make Spicy and Sour Cold Jelly: A Complete Guide

Spicy and sour cold jelly is a beloved summer dish, loved for its refreshing texture and zesty kick. Here’s a simple guide to making it at home.

Ingredients:

- 200g mung bean jelly (or starch-based jelly)

- 3 garlic cloves, minced

- 2 tbsp chili oil

- 1 tbsp black vinegar (or rice vinegar)

- 1 tsp light soy sauce

- 1 tsp sugar

- 1 tsp sesame seeds

- Fresh coriander (optional)

- Cucumber shreds (for extra crunch)

Steps:

1. Prepare the Jelly: Cut the jelly into 1cm cubes or thin strips. If using store-bought jelly, rinse under cold water to remove excess starch. Boil water, blanch the jelly for 10 seconds, then drain and let it cool completely.

2. Make the Sauce: In a bowl, mix minced garlic, chili oil, black vinegar, soy sauce, and sugar until the sugar dissolves. Adjust sourness or spiciness to taste.

3. Combine: Place the cooled jelly in a serving dish. Pour the sauce over it, add cucumber shreds, sesame seeds, and coriander. Toss gently to coat evenly.

4. Chill (Optional): For a colder touch, refrigerate for 15–20 minutes before serving.

Tips: For a richer flavor, add a pinch of Sichuan pepper or a drizzle of sesame oil. This dish pairs perfectly with grilled meats or as a standalone appetizer. Enjoy its fiery, tangy goodness on a hot day!
