Ingredients: 500g fish paste (surimi or blended fish fillets), 1 tbsp cornstarch, 1 egg white, 1 tsp salt, ½ tsp white pepper, 10-15 wooden skewers, 2 tbsp oil, 3 tbsp curry powder, 1 coconut milk (400ml), 1 tbsp sugar, 1 tbsp soy sauce, and chopped cilantro for garnish.

Steps:

3. Make the curry sauce: Heat oil in a pan, sauté curry powder until fragrant. Pour in coconut milk, add sugar and soy sauce, and simmer for 3 minutes.

4. Combine: Toss fish balls in the curry sauce, coating them evenly. Simmer for 2 more minutes to let the flavors meld.

Serving: Garnish with cilantro and serve hot as a snack, with rice, or in noodle soup. For extra spice, add a dash of chili sauce!
