How to Make Dry-Pot Cauliflower: A Comprehensive Guide

Dry-pot cauliflower, a Sichuan-inspired stir-fry, delights with its crispy-tender florets and numbing-spicy sauce. Here’s a detailed guide to mastering this dish at home.

Ingredients: 1 large cauliflower (cut into florets), 200g ground pork (or chicken), 3 dried chilies, 1 tbsp Sichuan peppercorns, 2 cloves garlic (minced), 1 tbsp ginger (minced), 2 tbsp doubanjiang (broad bean paste), 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar, 2 tbsp cooking oil, and optional scallions/cilantro for garnish.

Steps:

1. Prep: Soak dried chilies in warm water for 10 minutes (remove seeds for less heat). Blanch cauliflower florets in boiling salted water for 2 minutes; drain and pat dry.

2. Stir-fry: Heat oil in a wok over medium-high heat. Sauté Sichuan peppercorns until fragrant, then remove. Stir-fry dried chilies, garlic, and ginger until aromatic. Add ground pork, breaking it apart, and cook until browned.

3. Season: Stir in doubanjiang, cook for 1 minute until oil turns red. Add blanched cauliflower, mixing well. Pour in light/dark soy sauce and sugar; toss to coat evenly.

4. Finish: Cook for 3-5 minutes, allowing edges to crisp slightly. Garnish with scallions or cilantro. Serve hot with rice.

Tips: For extra crunch, deep-fry cauliflower briefly before stir-frying. Adjust spice levels by controlling chili and peppercorn amounts. Enjoy this umami-rich, finger-licking dish that’s perfect for weeknight dinners!
