Ejiao cake, a traditional Chinese delicacy, is loved for its rich flavor and health benefits. Making it at home is easier than you think! Here’s a basic recipe to get you started.
Ingredients:
- 200g Ejiao (melted into liquid)
- 150g red dates (pitted and chopped)
- 100g walnuts (lightly toasted and crushed)
- 100g black sesame seeds
- 100g rock sugar (ground into powder)
- 200g glutinous rice flour (roasted)
- 50ml water or milk
Steps:
1. Mix Dry Ingredients: In a bowl, combine roasted glutinous rice flour, rock sugar powder, walnuts, black sesame seeds, and chopped red dates. Stir evenly.
2. Add Ejiao: Pour the melted Ejiao into the mixture. Gradually add water or milk while stirring until a thick, dough-like form holds together.
3. Shape and Steam: Press the mixture into a greased square mold (about 1cm thick). Steam over high heat for 30-40 minutes until firm.
4. Cool and Slice: Let it cool completely, then cut into small squares. Store in an airtight container in the refrigerator for up to 2 weeks.
Tips: For extra flavor, add a pinch of osmanthus or goji berries. Adjust sweetness to your taste by varying the sugar. Enjoy this nutritious snack as a dessert or energy boost!
