How to Stir-Fried Loofah: A Simple Guide

Stir-fried loofah is a light, nutritious, and quick Chinese dish loved for its delicate flavor and tender texture. Here’s a simple guide to making it perfectly.

First, choose fresh, young loofah with smooth, green skin—avoid those with yellow spots or soft spots. Wash it thoroughly, then peel the skin lightly (optional for younger loofah) and cut it into 0.5cm thick rounds or bite-sized pieces. To prevent browning, soak the cut loofah in salted water for 5 minutes, then drain.

Heat 2 tablespoons of oil in a wok over medium-high heat. Add minced garlic (or ginger) and stir-fry until fragrant, about 10 seconds. Toss in the loofah and stir-fry for 2–3 minutes until it softens slightly. Season with 1 teaspoon of salt, a pinch of sugar (to enhance freshness), and a few drops of light soy sauce for color.

For extra flavor, you can add a splash of water, cover the wok, and let it steam for 1–2 minutes until the loofah is tender but not mushy. Finish with a sprinkle of sesame oil and chopped green onions before serving.
