Steaming fish is a delicate and healthy cooking method that preserves its natural flavor and nutrients. Crispy Steamed Crucian Carp is a classic Chinese dish, celebrated for its tender flesh and savory aroma. Here’s a simple yet authentic recipe to achieve restaurant-quality results at home.

Ingredients:

- 1 fresh crucian carp (about 500-600g), scaled, gutted, and scored diagonally on both sides

- 2-3 slices of ginger

- 2 scallions, cut into sections

- 2 tbsp light soy sauce

- 1 tsp Shaoxing wine (optional)

- 1 tbsp cooking oil

- A pinch of salt and white pepper

Steps:

1. Prep the Fish: Rinse the carp thoroughly and pat dry with paper towels. Rub inside and out with salt, white pepper, and Shaoxing wine. Stuff the cavity with ginger and scallion sections. Place remaining ginger and scallions on top to lock in moisture.

2. Steam the Fish: Bring a wok or steamer to a rolling boil. Carefully place the fish on a heatproof dish and steam over high heat for 8-10 minutes (adjust time based on fish size). Check doneness by inserting a chopstick into the thickest part—if it slides out easily, the fish is ready.
